was needed to highlight the aromatic flavor subtleties of the Oregon truffles.

Generically, we call them Oregon Truffles; the scientific names are Tuber Oregonense and Tuber Gibbosum for our spring and winter white truffles and Leucangium Carthianum for our black truffle.

Oregon Truffles are a Northwest delicacy foraged, with the help of dogs, under the Douglas Firs from Northern California to Southern British Columbia.
